Crunchy Granola
My Crunchy Granola is deliciously rich and sweet so, although it is a great source of fibre, good fats, protein, vitamins and minerals, you only need a little bit (easier said than done!). In our house, we find it works well as a 'special treat sometimes-brekkie (or snack)'. My husband loves sprinkling it on his porridge to jazz it up when he's feeling porridge is getting a bit 'same same'... and the kids love it anytime they can get their little fingers on it! It is also great sprinkled on or under paw paw, natural yoghurt and flaxseed oil. I vary the quantities and ingredients every time I make it depending upon what I feel like and what I have in my cupboard. Other things you can add include nuts, chia seeds, flaxseeds.... and you can add dried fruit 10 minutes before the end of baking if you like your granola fruity and sweeter.
Ingredients:
4 cups rolled oats
1 cup organic dessicated coconut
1 cup pepitas
1 cup sunflower seeds
1 cup sesame seeds
Splash of vanilla
Hefty shake of ground cinnamon
1/2 tsp himalayan or sea salt
1/2 cup raw honey (or 100% pure maple syrup)
1/2 cup organic cold pressed extra virgin coconut oil
Preheat oven to 180 degrees.
Mix dry ingredients directly into baking dish.
Warm/melt coconut oil with honey (or 100% pure maple syrup) then massage through dry ingredients.
Bake in oven for 30 mins, stirring and checking occasionally until a light golden brown colour.
